Never did I imagine that we would ever get more peaches off our two little trees than we could fit into our freezer. But the freezer is full and this is how our kitchen counter and stove still looked!
We started making a to-do list for canning peaches: get quart jars from the garage, get lids and large enamel pot from basement, buy more sugar, etc. but, to be honest, I really wasn’t into the idea of canning peaches. All that boiling water and steam, what a drag!
So I suddenly decided to dehydrate the peaches instead.
Wish I had thought of this much earlier. We had no way to slow the ripening of the remaining peaches or to speed up the drying process, so we lost a few. But we’re happy with the results all the same, four cups of yummy dried peaches.
Oh, I’m just messing with you! I also filled this bigger container, which holds twelve cups. Yay!
Four plus twelve is sixteen. Sixteen cups. . . why, that’s a whole gallon of dried peaches! Unbelievable.
